| 摘 要： | 谷物籽粒是人类最基本的粮食,其胚乳淀粉与品质有密切的关系.本文就谷物胚乳淀粉的合成积累过程、谷物淀粉合成酶的作用与特性、淀粉特性与品质的关系以及基因工程在改良作物淀粉品质方面的研究进展进行了综述,并对谷物籽粒淀粉进一步的研究提出了展望,为谷物淀粉品质育种提供参考.

| Abstract: | The cereal grain serves as a primary carbohydrate component in the diets of humans,and there is a close correlation between the starch in the endospermas and the cereal quality.This review puts the current state of knowledge about the application and biosynthetic of the starch in cereal grain,the functions and characters of starch synthases,the relationship between starch properties and starch quality,and the genetic improvement on starch properties.We also discussed further studies for cereal starch,hopefully stimulate subsequent research and understand on cereal starch. |
