| 摘 要： | 本文简要介绍了近年来在植物中发现的几种甜味蛋白质的分子结构及其化学性质。讨论了它们在结构上的相关性及可能的甜味机制，并对甜蛋白在食品工业及植物改良方面的应用进行了展望。
