| 摘 要： | 黄曲霉素是一类剧毒的真菌毒素,具有极强的致癌性。它广泛存在于食品中,对其进行及时、快速、高效地检测和有效的分离,控制含量在允许的范围内至关重要。综述了黄曲霉素的毒理学效应机制,分析比较了各种检测方法,并提出了今后研究工作的方向,为此方向的研究提供参考。

| Abstract: | Aflatoxin is a highly toxic mycotoxin and has strong carcinogen widespread in food. Methods for its rapid and efficient detection, removal, and control are crucial. This paper reviews the mechanisms of aflatoxin toxicity, analyzes detection methods, and points out future research directions. |
