刺梨果实冷冻贮藏保鲜及取汁技术研究

摘    要:为了彻底解决刺梨(Rosa roxburghii Tratt)加工原料周年供应及提高刺梨果实出汁率问题,本试验采用速冻、缓冻果实贮藏方法,分别进行一年之久的小试、中试,并向加工生产企业推广应用。结果显示,好果率均达100%,其中速冻装袋果出汁率高达61%以上,分别比缓冻果和鲜果高出9.69%~11.71%和48.94%~54.41%,如果采用压榨性能良好的压榨机压榨取汁,出汁率可高达65%左右。

Abstract:In order to dispose the year-round supply of processing materials and raise the rate of extraction juice of fruit of Rosa roxburghii,the authors had found out the way to storage fruit with quick-frozen and slow-frozen,and did small sized and medium sized tests over a year,and had popularized into the food processing enterprise.The results were as follows: the rate of good fruit has reached 100%;the quick-frozen store fruit in bags extract juice rate to gain on 61%.It is 9.69%-11.71% higher than slow-freeze and 48.94%-56.41% more than the fresh fruit.
