山药的开发利用

摘    要:山药是我国著名的补益中药,同时也是传统的保健菜肴。本文综述了山药的原植物,形状,食用价值,药用价值及保健功能,质量标准,贮藏,加工与开发利用,并提出了开发利用的策略。最后展望了开发利用的前景。

Abstract:Chinese Yam is not only Chinese traditional medicine which is benefit to people's health, but also traditional and functional food in China. This paper reviewed original vegetable of Chinese Yam, its shape, edible value, officinal value and functional value, quality standard, storage, process, development and utilization. Strategic measures and prospect for its development and utilization of Chinese Yam were put forward.
