摘    要:本文报道了中华绒螯蟹越冬时和越冬后不同性别,不同生活状态粗脂肪中不饱和脂肪酸及肌肉中不饱和脂肪酸含量及变化,分析了不饱和脂肪酸含量与越冬死亡,越冬后交配,产卵和孵化关系。越冬前雌,雄河蟹粗脂肪中不饱和脂肪酸碘(I2)值为57和48。越冬(越冬时,越冬后)死亡雌,雄河蟹粗脂肪中不饱和脂肪酸I2值分别低于28和10;而其肌肉中不饱和脂肪酸的I2值分别低于1.25和0.83。越冬后能成功交配的雄河蟹粗脂肪中不饱和脂肪酸I2值高于33。越冬后交配产卵雌河蟹粗脂肪中不饱和脂肪酸I2值高于42,抱卵并使卵正常孵化的雌河蟹粗脂肪中不饱和脂肪酸I2值大于47。脂肪酸在河蟹的细胞内氧化分解,为越冬提供了能量。

Abstract:This paper reports the concentration and its variation of unsaturated fatty acid in crude fat and muscles of both males and females Chinese mitten crab during and after the winter, and analysis the relationship between the death?mating?egg-laying?hatching and the concentration of unsaturated fatty acid. The iodine value of unsaturated fatty acid in crude fat of females and males Chinese mitten crab are respectively 57 and 48 before the winter. That of death females and males Chinese mitten crab are inferior to 28 and 10 respectively during the winter, and they in muscles are inferior to 1.25 and 0.83 respectively. That of males Chinese mitten crab, wich is mating successfully, is superior to 33 after the winter. That of females Chinese mitten crab, which is egg-laying after mating, is superior to 42; that of female, which can carry their eggs and make those eggs hatch, is superior to 47. Oxidative decomposition of unsaturated fatty acid in cells provided energy for Chinese mitten crab through the winter.
