Abstract:The contents of nitrate, nitrite and vitamin C in leaves of Rorippa islandica (Oed.) Bord., Ixeris chinensis (Thunb.) Nakai, Plantago depressa Willd. and Cirsium setosum (Willd.) MB. were determined. According to the investigated result, it indicated that the former three wild vegetables have good quality because of higher content of V C and unharmful amount of nitrate or nitrite while C. setosum is not edible one for higher nitrate content.
