摘    要:短梗霉多糖具有极佳的成膜性,其水溶液可以在水果表面形成一层透明有光泽的薄膜。该薄膜对氧气、氮气、二氧化碳、永分和有关香气有很好的阻隔作用,而且有较强的硬度及对温度变化的稳定性。因此,在水果表面挂上短梗霉多糖薄膜后,能有效地阻止水分、氧、氮、和二氧化碳等气体在果品内外的交换,从而抑制了水果的呼吸作用,减少了营养的储藏性损耗,进而达到了良好的保鲜目的。

Abstract:The pullulan solution can very easily form a very thin.transparent;;and glossy film onthe fruface of sruits.The film has some advantages such as its better gas separation;;hardness and stability in different temperatures and so on;;which can effectively prevent O2.CO2;;N2;;moisture;;and some aromatic gas into or out the fruits.Therefore;;the film caneffectively prevent fruits.moisture from evaporating;;inhibit Vc and other nutritiousmaterials oxidizing and the gas exchanging in the fruits.The results showed that with thepreservation method;;the respiration of the fruits could be inhibited.the consuumption ofsome mutritious materials in the courese of storage could be decreased;;and the special flavourof the fruits could be maintained in a better state.
