食用菌半纤维素酶系研究进展

摘    要:半纤维素是一类取之不尽而又亟待开发利用的碳水化合物。对食用菌半纤维素酶系的研究已经积累了诸多资料,主要包括β-1,4-内切木聚糖酶、β-木糖苷酶、α-阿拉伯呋喃糖苷酶、乙酰木聚糖酯酶、α-葡萄糖醛酸酶的研究。主要对半纤维素酶系,尤其是木聚糖酶的生物化学与分子生物学研究进行了简要概括,包括结构、酶学性质、基因的克隆与表达等,并综述了在食用菌生产中半纤维素酶活性的变化,最后展望了食用菌半纤维素酶系今后的主要研究方向。

Abstract:Hemicellulose as a kind of very abundant carbohydrate is not yet exploited. Hemicellulases, including β-1, 4-endoxy- lanase, β-xylosidase, α-arabinosidase, α-glucurunidase and acetylxylan esterase have been well characterized. The main points of this review were the recent advances of research progress in hemicellulase of edible fungi, especially on xylanase, including the structure, characterization, the gene cloning of enzyme moleculars, enzyme activity change during production and the focus of the future studies.
