| 摘 要： | 脂肪酶催化作用发生在油-水界面上，是一种典型的界面酶，因此其活力测定有别于其他的水相酶。如何准确测定酶活力的大小，对于研究该酶的特性及应用具有重要的意义。本文对脂肪酶检测的常用方法进行了综述与评价。
