摘    要:葡萄糖异构酶(Glucose isomerase,GI)能催化D-葡萄糖的异构化反应,生成D-果糖,是目前工业上制备高果糖浆(HFCS)的关键酶之一。本文对GI的来源、分类、高级结构特征和催化机制进行了介绍,并从GI催化功能的改善、基因工程菌的构建和固定化三个方面对GI在HFCS生产中应用的关键技术和策略进行分析。

Abstract:Glucose isomerase(GI)can catalyze the isomerization of D-glucose to D-fructose,and be considered as one of the most important enzymes applied in the production of high fructose corn syrup(HFCS).In this review,the characteristics of GI,including origin,class,structure,and catalytic mechanism are briefly introduced.Furthermore,it summarizes the improvement of GI catalytic performance,construction of genetically engineered strains and GI immobilization,which are seen as the key techniques and strategies applied in HFCS production with GI.
