摘    要:对牦牛肝中主要营养成分进行测定,然后用单因素和响应面分析法确定牦牛肝蛋白的最佳提取工艺.通过单因素试验选取影响因素与水平,在此基础上采用四因素三水平的响应面分析法,根据回归分析确定最佳提取工艺.试验结果表明:鲜牦牛肝水分含量为70.85%、灰分含量为0.7%、蛋白含量为19.70%、粗脂肪含量为2.92%;最佳提取工艺...
