白葡萄酒活性干酵母对不同氮源利用的研究

摘    要:选用5种不同的白葡萄酒活性干酵母,以硫酸铵、氯化铵、硝酸铵、尿素、酵母粉等5种物质为氮源,观察其生长量并称量菌体重,以此分析其对氮源利用情况及不同氮源对酵母生长的影响。研究表明:供试菌系在不同氮源中均能生长。不同氮源对酵母的生长速度和生长量有不同影响;不同酵母菌种对不同氮源的利用也有差异。在以酵母粉为氮源的培养基中生长最好。在实验提供的氮源中,酵母粉为供试菌最优氮源,其次是硫酸铵,氯化铵与硫酸铵基本相当,而硝酸铵最差。8#菌种对各种氮源的利用能力相对较强。17#菌种对各种氮源的利用能力最弱。

Abstract:Cultivateing sack active dry yeast in five different nitrogen sources: ammonium sulfate;amchlor;ammonium nitrate;urea;yeast powder et al,to observe its productionthe yield and weight the thallus.Thus analyze the nitrogen's utilization and its effect on the growth of yeast.The results showed: the examined strains could grow on every source.The growth ratevelocity and productionyield were various in different on disparity sources;the utilization of various nitrogen source by different barms were also had distinction.The best medium was the yeast powder source.The second was the ammonium sulfate,and amchlor was similar to ammonium sulfate,then ammonium nitrate was the worst.The utilization capability of 8# was the best among had the most utilization capability of various nitrogen sources,andbut 17# was the poorest.
