红曲色素提取条件及结构表证

摘    要:以乙醇为溶剂,从红曲中提取红曲色素。探讨了提取条件对提取率的影响,并用FTIR和UV对色素结构进行了表征。结果表明,最佳乙醇浓度为70%~80%,在此条件下提取5次,提取率可达到90%。在提取的头一小时内,浸出速率较高,提高温度有利于提高提取液浓度和降低乙醇用量。增大乙醇对红曲的用量比例,虽然有利于提高浸出率,但是会明显增加乙醇耗量。

Abstract:The monascus pigments were extracted from the red yeast taking alcohol as the solvent,and the effect of extracting conditions for the extraction rate was investigated, and the pigment structure was characterized by FTIR and UV. It was shown,the best concentration of alcohol was in the range of 70% -80% ,and the extraction rate reached 90% under the condition for 5 times. The extraction efficiency was higher for the first hour. Increasing the temperature was advantage to increase the liquid concentration and reduce the consumption of alcohol. Increasing the ratio of alcohol to the red yeast,it would increase the consumption of alcohol,although it was in favour of increasing extraction rate.
