| 摘 要： | 麦角硫因是自然界中一种稀有天然氨基酸,在机体内具有重要的生理活性,国外研究表明其具有较强的抗氧化作用,目前国内相关报道很少。文章对麦角硫因的理化特性、在自然界中的分布、生物学功能、代谢过程及其分离纯化方法作了简单介绍,并展望了麦角硫因的应用前景。

| Abstract: | Ergothioneine(EGT) is a rare amino acid in the nature,it is an important active substance found in fungi and various animal tissues.Studies abroad have demonstrated that EGT can act as a natural antioxidant which is capable of scavenging different radicals and inhibiting lipid oxidation.The physical and chemical properties,distribution,metabolisCm,biological functions of EGT,and its development and application in medicine field are summarized. |
