摘    要:应用四醋酸钙对黑曲霉、黄曲霉、米曲霉、链格孢霉等霉菌和大肠杆菌、枯草杆菌、绿脓杆菌、金黄色葡萄球菌等细菌生长影响作了研究,并将四醋酸钙与醋酸钙、苯甲酸钠对上述微生物的生长抑制作用加以比较。0.4%四醋酸钙对上述细菌的生长有明显的抑制作用。对上述霉菌生长亦有一定的抑制作用。当其与苯甲酸钠协同使用时,能更明显地抑制微生物生长。实验结果表明四醋酸钙很可能是一种安全性高、成本低的新型食品防腐剂。

Abstract:Aspergillus niger, Aspergillus flavus, Aspergillus oryzaem, Alternaria alter-nate, Eschrichia coli, Bacillus subtilis, Bacterium pyocyaneum, Staphylococcus aureus were used for antimicrobial test of calcium acetate complex (calcium ace-tate, calcium triacetate, calcium tetraacetate). The experiment showed that cal-cium tetraacetate had certain antimold activities. There were obvious antibacteria effects in calcium tetraacetate groups,and the inhibitory rates were 88.9%,43.4%, 99.8% and 100% to E.coli, B.subtilis, B.pyocyaneum, S. aureus respectively. The effect of calcium tetraacetate against certain bacteria seemed better than that of sodium benzoate. A synergestic effect of sodium benzoate and calcium tetraacetate was found on antibacterium effect against E.coli. Adding to the bread, calcium tetra-acetate could extend the shelf life. The preservable period of bread by ad-dition of 0.6% calcium acetate and 0.1% sodium benzoate was twice as much as that of 0.1% sodium benzoate alone. The toxicity of tetraacetate on mice was very low by oral administration (LD50 2.75g/kg), but certain toxicity was found on mice by ip administration (LD50 396mg/kg). Calcium tetraacetate might be one of the safe, cheap food preservatives.
