Abstract: | Summary Ground oat seeds can serve as a source of lipase in both aqueous-oil emulsions and in organic solvents. In organic solvents the lipase lost selectivity for monounsaturated fatty acids. Because of this, polyunsaturated vegetable oils were rapidly split. The lipase source is very inexpensive and is recyclable, to a certain extent. |
