Abstract: | S ummary : When the minimum proportion of Enterobacteriaceae to salmonellae in dried foods processed for safety is of the order of 103, as the authors' surveys show them to be, testing 1 or 2 × 1 g aliquots for Enterobacteriaceae and allowing no positives confers the same degree of consumers' protection as examining 60 × 25 g amounts directly for salmonellae and accepting the consignment only when no positives are detected. |
