Abstract:In this paper, a broad overview of present situation of studies on water-hyacinth leaf proteins was given. These included the evaluation of the nutritional quality, the extracting technology, toxicity and functional properties of water-hyacinth leaf proteins. The prediction of their development trends was also presented.
