紫红丝膜菌子实体色素的提取及其稳定性研究

摘    要:采用单因素和正交试验,研究紫红丝膜菌子实体色素的提取条件及其稳定性。色素最佳提取条件为以80%乙醇60℃下提取2h,影响程度为乙醇体积分数>浸提时间>浸提温度。色素对自然光、紫外光不稳定;酸性条件下为紫红色,碱性为堇紫色;对Fe3+不稳定;对氧化剂不稳定,对还原剂稳定;对常用食品添加剂相对稳定;温度的变化对色素影响甚微。

Abstract:The extraction condition and the stability of natural pigment in fruiting-body of Cortinarius rufo-olivaceus were tested by using single factor and orthogonal experiment. The results showed that the pigment was extracted effectively with 80% of alcohol at 60℃ for 2 h. Among these factors, concentration of alcohol had the greatest effect on extraction of pigment, then duration and temperature of extraction. Pigment was instability to sunlight and ultraviolet light. Pigment was amaranth in acid condition and purple in alkalescence condition. The pigment was instability to Fe^3 + . It was instability to oxidant, stability to reducer. Pigment was relative stability to food additive and antiseptic. And the temperature had little effect to pigment at low 100℃.
