| 摘 要： | 应用美国ＢＥＣＫＭＡＮ １２１ ＭＢ型全自动氨基酸分析仪对三线闭壳龟肌肉中的氨基酸种类及含量进行了分析。三线闭壳龟肌肉中能检出的氨基酸有１７种，每种氨基酸的含量如下：天门冬氨酸６９０５ｍｇ／１００ｇ，苏氨酸３２４０ｍｇ／１００ｇ，丝氨酸２９２９ｍｇ／１００ｇ，谷氨酸１２７４０ｍｇ／１００ｇ，脯酸２６８５ｇｍ／１００ｇ，甘氨酸２９５３ｍｇ／１００ｇ，丙氨酸３４８３ｍｇ／１００ｇ，酪氨酸２９１０ｍｇ／

| Abstract: | The kinds and contents of amino acids in the muscl es of Cuora trif asciata were analyzed with America BECKMAN 121 MB whole-automatic amino acid a na lytical instrument There are seventeen amino acids in the muscles of Cuora t rif asciata The contents of amino acids are as follows: Aspartic acid 6905 mg/10 0g, Threonine 3240 mg/100g, Serine 2929 mg/100g, Glutamic acid 12740 mg/100g, Proli ne 2685 mg/100g, Glycine 2953 mg/100g, Alanine 3483 mg/100g, Cystine 804 mg/100g , Valine 3534 mg/100g, Methionine 1676 mg/100g, Isoleucine 3123 mg/100g, Leucine 6213 mg/100g, Tyrosine 2910 mg/100g, Phenylalanine 3243 mg/100g, Lysine 6190 m g /100g, Histidine 4130 mg/100g, Arginine 4294 mg/100g The results showed that t h e contents of essential amino acids in Cuora trifasciata muscles are high an d it is a source of good protein |
