Abstract:Protein nutrition evaluation in Lepista sordida fruiting body was discussed with its contents and composition of protein and amino acid by the common methods of nutrition evaluation.The results showed that amino acid score(AAS) of the first limiting amino acid in Lepista sordida fruiting body was Val 68.0,which was higher than P.ostreatus 54.3,A.bisporus 50.0,respectively,lower than L.edodes 69.1.Chemical score(CS)of the first limiting amino acid in Lepista sordida fruiting body was Met82.8,which was higher...
