Molecular organization of kappa carrageenan in aqueous solution |

| Abstract: | The interaction of K+ with unsegmented kappa carrageenan in aqueous solution was studied by conductimetry, optical rotation and light scattering. By comparing the results from the different techniques it is possible to propose the existence of an equilibrium between molecules as single-helix and helical-dimer depending on the ionic concentration. |
