In a study of pungency in food systems, three carriers (water, cheese sauce, starch paste) with varying fat levels (none, low, medium, high), synthetic capsaicin concentrations (0.0, 0.4, 0.8, 1.3 ppm), and serving temperatures (25 and 38C) were formulated. Panelists evaluated sensory heat intensity over a 3-min interval. Time-intensity parameters (maximum intensity-MAX, time to maximum intensity-TMAX, and rate of release-RATE) were evaluated. Overall, intensity scores increased as capsaicin concentration increased. The increase was related to carrier and fat level. Water samples (0.4, 0.8, and 1.3 ppm) were perceived as more intense than cheese or starch samples at the same capsaicin level. Generally, increasing the fat level resulted in lower intensity scores. Warming samples increased RATE, the only parameter affected by temperature. The training method was effective when water was the carrier. However, physical or chemical interactions that occur in simple food systems may influence perceived pungency.  相似文献

Understanding the mechanisms that influence variation in sexually selected ornaments in seabirds has been challenging owing to the difficulty of capturing and sampling individuals outside of the breeding period when ornaments are usually grown. Stable carbon (δ13C) and nitrogen (δ15N) isotopes were used to examine the influence of pre-breeding diet composition on ornament size in the Rhinoceros Auklet Cerorhinca monocerata , a socially monogamous seabird that breeds in the North Pacific. We analysed stable isotopes in adult feathers grown during the pre-alternate moult, which allowed us to infer diet composition during the pre-breeding (February–March) period. Females that fed more on inshore fish had larger horns than females that fed more on euphausiids (also known as krill; Euphausiacea). Body size was a stronger predictor of horn height in males than females, suggesting that ornaments may serve as different signals for each sex. This study provides evidence that diet during the pre-breeding period can influence ornament size and emphasizes the importance of understanding individual ecology throughout the annual cycle for determining the factors that influence mate choice and fitness.  相似文献

Changes in regional climate in the Rocky Mountains over the next 100 years are expected to have significant effects on biogeochemical cycles and hydrological processes. In particular, decreased discharge and lower stream depth during summer when ultraviolet radiation (UVR) is the highest combined with greater photo-oxidation of dissolved organic materials (DOM) will significantly increase exposure of benthic communities to UVR. Communities in many Rocky Mountain streams are simultaneously exposed to elevated metals from abandoned mines, the toxicity and bioavailability of which are also determined by DOM. We integrated field surveys of 19 streams (21 sites) along a gradient of metal contamination with microcosm and field experiments conducted in Colorado, USA, and New Zealand to investigate the influence of DOM on bioavailability of heavy metals and exposure of benthic communities to UVR. Spatial and seasonal variation in DOM were closely related to stream discharge and significantly influenced heavy metal uptake in benthic organisms. Qualitative and quantitative changes in DOM resulting from exposure to sunlight increased UV-B (290–320 nm) penetration and toxicity of heavy metals. Results of microcosm experiments showed that benthic communities from a metal-polluted stream were tolerant of metals, but were more sensitive to UV-B than communities from a reference stream. We speculate that the greater sensitivity of these communities to UV-B resulted from costs associated with metal tolerance. Exclusion of UVR from 12 separate Colorado streams and from outdoor stream microcosms in New Zealand increased the abundance of benthic organisms (mayflies, stoneflies, and caddisflies) by 18% and 54%, respectively. Our findings demonstrate the importance of considering changes in regional climate and UV-B exposure when assessing the effects of local anthropogenic stressors.  相似文献

In recent years, liquid biofuels for transport have benefited from significant political support due to their potential role in curbing climate change and reducing our dependence on fossil fuels. They may also participate to rural development by providing new markets for agricultural production. However, the growth of energy crops has raised concerns due to their high consumption of conventional fuels, fertilizers and pesticides, their impacts on ecosystems and their competition for arable land with food crops. Low-input species such as Jatropha curcas , a perennial, inedible crop well adapted to semiarid regions, has received much interest as a new alternative for biofuel production, minimizing adverse effects on the environment and food supply. Here, we used life-cycle assessment to quantify the benefits of J. curcas biofuel production in West Africa in terms of greenhouse gas emissions and fossil energy use, compared with fossil diesel fuel and other biofuels. Biodiesel from J. curcas has a much higher performance than current biofuels, relative to oil-derived diesel fuels. Under West Africa conditions, J. curcas biodiesel allows a 72% saving in greenhouse gas emissions compared with conventional diesel fuel, and its energy yield (the ratio of biodiesel energy output to fossil energy input) is 4.7. J. curcas production studied is eco-compatible for the impacts under consideration and fits into the context of sustainable development.  相似文献

The growing zone of maize seedling primary roots accumulatesproline at low water potential. Endosperm removal and excisionof root tips rapidly decreased the proline pool and greatlyreduced proline accumulation in root tips at low water potential.Proline accumulation was not restored by exogenous amino acids.Labelling root tips with [14C]glutamate and [14C]proline showedthat the rate of proline utilization (oxidation and proteinsynthesis) exceeded the rate of biosynthesis by five-fold athigh and low water potentials. This explains the reduction inthe proline pool following root and endosperm excision and theinability to accumulate proline at low water potential. Theendosperm is therefore the source of the proline that accumulatesin the root tips of intact seedlings. Proline constituted 10% of the amino acids released from the endosperm. [14C]Prolinewas transported from the scutellum to other parts of the seedlingand reached the highest concentration in the root tip. Less[14C]proline was transported at low water potential but becauseof the lower rate of protein synthesis and oxidation, more accumulatedas proline in the root tip. Despite the low biosynthesis capacityof the roots, the extent of proline accumulation in relationto water potential is precisely controlled by transport andutilization rate.  相似文献

Cluster analysis, consonance analysis, principal component analysis (PCA) and the GRAPES program (Schlich 1994) were compared for the evaluation of panel performance. Ten judges evaluated 25 Merlot wines for 24 color, aroma and flavor attributes. Cluster analysis grouped similar judges. PCA identified judges according to their attribute use. Consonance analysis determined a numerical index for attribute agreement and the GRAPES program compared judges in their use of the scale, reliability, discrimination and disagreement. Three of the four techniques provided a graphical representation of similarities and differences between judges. Methodologies were best used in conjunction with one another. Ultimately the application of these tools will serve to improve the quality of sensory evaluations.  相似文献

The ability of panelists to distinguish between samples of apple juice with two levels of added sucrose (0.1 and 0.9 g/100 mL) or NaCl (0.05 and 0.14 g/100 mL) was determined using a modified signal detection technique. Samples at various temperatures (6, 24, or 50C) were presented with various rinse conditions. Sometimes a water rinse (6, 24, or 50C) was presented between samples and somtimes not. R-index values were calculated to predict the ability of panelists to distinguish between samples. No temperature effect was found for sweetness difference tests; however, R-indices showed that salty differences in apple juice were more distinguishable at a sample temperature of 24C than at 6 or 50C. Samples temperature had a greater effect than rinse condition (temperature or no rinse) on discrimination between samples differing in NaCl concentration.  相似文献
