Summary

The sex-ratio and behavioural mating peculiarities of Tetraneura nigriabdominalis have been investigated. A morphological study by SEM revealed the developmental stages of sex-attractant pheromone glands on the hind tibiae of females, the morphology of the chemiosensilla on the male antennae, and peculiar microsculptures on abdominal stemites which may be interpreted as an anchorage system favouring copulation.  相似文献

The aim of this research project was to investigate umami taste properties of recipes based on Italian culinary tradition and prepared with umami-rich ingredients, focusing on the impact of the preparation and ingredient combination. Gustative profiles were prepared for a traditional Italian dish, tender beef bouillon, usually consumed with pasta stuffed with beef. Four different samples were designed by changing the ingredients (with or without integrating Parmigiano cheese) and the preparation (cooking time) of the recipe. Panelists were rigorously trained for umami taste evaluation using monosodium L-glutamate (MSG) aqueous solutions and were then asked to evaluate umami sensation in tender beef bouillon with or without added Parmigiano Reggiano . A majority of the panelists were able to distinguish correctly umami sensations induced by MSG. The level of umami enhancement induced by Parmigiano Reggiano was clearly perceived by the panelists, and this enhancement positively affected also other basic tastes; whereas the cooking time had no clear effect on the gustative perception.

PRACTICAL APPLICATIONS


In western countries, people do not know much about umami. This taste is defined as the "savoriness" of the glutamate. Umami-taste substances are present in several foods, but whereas the taste of monosodium glutamate and 5' nucleotides can be without difficulty identified in water solutions, which are usually employed for panel training, the ability to identify this primary taste decreases enormously in more complex matrices like food. This study describes a procedure for screening and training sensory panels and could serve as a guide in teaching panelists to recognize and quantify the umami taste in a multistimuli matrix like a food recipe or product.
It also provides a practical application in a recipe in which the umami taste is modulated by the culinary preparation and ingredients.  相似文献

Complex and flexible food processing was a key element for the evolutionary success of hominins, enlarging the range of exploitable foods while enabling occupation of new habitats. Only a few primate species crack open encased food by using percussive tools and/or avoid physical contact with irritant compounds by removing the structures containing them. We describe, for the first time, how a population of bearded capuchin monkeys (Sapajus libidinosus) accesses the nutritious kernel of cashew nuts avoiding the caustic chemicals protecting it. Two processing strategies, namely rubbing/piercing and stone tool use, are used according to maturity of the nuts. The frequency of cashew nuts processing increases with capuchin age, and the same set of processing strategies appears to be absent in other capuchin populations, making cashew nuts processing an excellent candidate for social transmission. Genetic variation in the human serotonin system has long been studied because of its functional consequences and links to various neuropsychiatric and behavior‐related disorders. Among non‐human primates, the common marmosets (Callithrix jacchus) and tufted capuchins monkeys (Cebus apella) are becoming increasingly used as models to study the effects of genes, environments, and their interaction on physiology and complex behavior. In order to investigate the independent functions of and potential interactions between serotonin‐related genes, anxiety and neuropsychiatric disorders, we analyzed the presence and variability of the serotonin transporter gene‐linked polymorphic region (5‐HTTLPR) in marmoset and capuchin monkeys. By PCR and using heterologous primers from the human sequence, we amplified and then sequenced the corresponding 5‐HTT region in marmosets and capuchins. The resulting data revealed the presence of a tandem repeat sequence similar to that described in humans, but unlike humans and other Old World primates, no variable length alleles were detected in these New World monkeys, suggesting that if serotonin transporter is involved in modulating behavior in these animals it does so through different molecular mechanisms. The anatomy and ultrastructure of glandular trichomes at differentdevelopmental stages were investigated inPhillyrea latifoliaL.leaves by transmission electron microscopy and histochemicaltechniques. The trichome consisted of a multicellular secretoryhead, a unicellular stalk and a collecting cell surrounded byepidermal cells and spongy mesophyll cells. There were numerousplasmodesmata across the cell walls of trichome cells, and especiallybetween the stalk cell and the collecting cell. The collectingcell and stalk cell contained few chloroplasts. Mitochondria,elements of the endoplasmic reticulum and small vacuoles wereabundant in the secretory cells. Crystals were present in thesecretory cells and the collecting cell, especially at the matureand senescent stages of trichome development. As the cuticle,which covered the secretory cells, did not show pores or perforations,it is proposed that secretion occurred by accumulation of productsin subcuticular spaces followed by diffusion through the cuticle.Callose accumulation was observed between the stalk cell andthe collecting cell of senescent trichomes, especially in salt-treatedplants.
