近年来食品添加剂的研究主要集中在新型安全的天然食品添加剂研究、食品添加剂制备中的新技术研究和食品添加剂的检测分析技术研究三个方面。本文概述了我国食品添加剂的现状、发展趋势及该领域的研究热点问题。同时对这两年国家自然科学基金委员会(以下简称基金委)在食品科学学科食品添加剂分支学科资助情况进行了分析,在基金申请中新型天然食品添加剂的研究受关注度较高,而利用生物技术制备天然食品添加剂这一研究热点在今年的申请和资助项目中也有体现。基金委在食品添加剂这一分支学科的资助体现了目前食品添加剂发展的趋势。  相似文献

禁食导致一些啮齿动物的贮食量增加,但禁食处理后雄性长爪沙鼠贮食行为的变化则不一致。每天禁食22 h,长爪沙鼠的一些个体表现出高水平的贮食行为(禁食贮食组),而另一些个体则没有表现出贮食行为(禁食无贮食组)。延长禁食(22 h)持续的时间(连续重复3 d 和20 d)和增加禁食时间(禁食48 h),都没有使禁食无贮食组的动物表现出贮食行为。同样在自由取食条件下,长爪沙鼠的贮食行为也表现为二型性。在自由取食和禁食条件下,贮食量与体重、体脂含量和瘦素的浓度之间无明显相关关系。研究结果表明,禁食是诱导雄性长爪沙鼠贮食行为发生的一个重要条件,但增加禁食的程度并不改变其贮食行为的表现。  相似文献

The past decade has proven the competence of nanotechnology in almost all known fields. The evolution of nanotechnology today in the area of the food industry has been largely and has had a lot of contribution in the food processing, food package, and food preservation. The increasing global human population has come with growing population to be fed, and food production is not adjusted to at par with the growing population. This mismatch has shown the real essence of food preservation so that food products can reach to people on a global scale. The introduction of nanotechnology in the food industry has made it easy to transport foods to different parts of the world by extending the shelf-life of most food products. Even with this beneficial aspect of nanotechnology, it has not been proven an entire full-proof measure, and the field is still open to changing technology. It suffices to note that nanotechnology has to a big extent succeed in curbing the extent of food wastage due to food spoilage by the microbial infestation. Nanotechnology has focused on fresh foods, ensuring a healthier food by employing nano-delivery systems in the process. The delivery systems are the ones, which carries the food supplements. However, these are certain sets of regulations that must be followed to tame or control the health related risks of nanotechnology in food industries. This paper outlines the role of nanotechnology at different levels of the food industry including, packaging of food, processing of food and the various preservation techniques all aiming to increase the shelf life of the food products.  相似文献

The ubiquitous presence of allergens in the human food supply coupled with increased awareness of food allergies warrants undertaking appropriate preventive measures to protect sensitive consumers from unwanted exposure to offending food allergens. Attempts to reduce or eliminate food allergenicity through food processing have met with mixed results. The rationale for using food processing to reduce/eliminate allergenicity and limitations to using this approach are discussed.  相似文献

The aim of this study was to understand the relationship between production of food calls by maternal hens and food context. In a series of experiments with broody hens, we manipulated quality of items, quantity of food, food experience and dispersion of food items. We measured the frequency of food calling during standardized tests. Our results show that all the variables tested had significant effects on food calling. These results present some similarities and some discrepancies with previous reports on food calling by cockerels.  相似文献

Infant marmosets and tamarins (Callitrichidae) frequently receive food from older group members. Three possible functions of food sharing in lion tamarins were examined experimentally. The first hypothesis, that food sharing ensures that infants receive sufficient food even if it is difficult for them to acquire it themselves, was tested by varying the ease with which infants could reach a food source. When access to food was restricted, infants fed themselves less, received more food from others, and had a higher success rate in begging attempts. The second hypothesis, that food sharing helps teach infants an appropriate diet, was tested by presenting fruits that were novel to infants. Although infants fed themselves less under these conditions, adults were less likely to share novel foods than familiar foods. The final experiment compared food sharing when food was abundant with behavior when food items were presented singly. Infants fed themselves less and received more food from others when food items were rare. These results suggest that food sharing in lion tamarins helps to ensure that infants receive adequate amounts of food which is difficult to locate or acquire, but that it is not involved in teaching infants which foods they should eat. © 1993 Wiley-Liss, Inc.  相似文献

Many animals hoard food, including humans, but despite its pervasiveness, little is known about the physiological mechanisms underlying this appetitive behavior. We summarize studies of food hoarding in humans and rodents with an emphasis on mechanistic laboratory studies of species where this behavior importantly impacts their energy balance (hamsters), but include laboratory rat studies although their wild counterparts do not hoard food. The photoperiod and cold can affect food hoarding, but food availability is the most significant environmental factor affecting food hoarding. Food-deprived/restricted hamsters and humans exhibit large increases in food hoarding compared with their fed counterparts, both doing so without overeating. Some of the peripheral and central peptides involved in food intake also affect food hoarding, although many have not been tested. Ad libitum-fed hamsters given systemic injections of ghrelin, the peripheral orexigenic hormone that increases with fasting, mimics food deprivation-induced increases in food hoarding. Neuropeptide Y or agouti-related protein, brain peptides stimulated by ghrelin, given centrally to ad libitum-fed hamsters, duplicates the early and prolonged postfood deprivation increases in food hoarding, whereas central melanocortin receptor agonism tends to inhibit food deprivation and ghrelin stimulation of hoarding. Central or peripheral leptin injection or peripheral cholecystokinin-33, known satiety peptides, inhibit food hoarding. Food hoarding markedly increases with pregnancy and lactation. Because fasted and/or obese humans hoard more food in general, and more high-density/high-fat foods specifically, than nonfasted and/or nonobese humans, understanding the mechanisms underlying food hoarding could provide another target for behavioral/pharmacological approaches to curb obesity.  相似文献

Access to food is of major importance to the fitness and survival of every individual, particularly in group-living animals, in which individual characteristics and food distribution can affect food intake. Additionally, several species of primates are known to share food under certain conditions. Such unresisted transfer of food from one individual to another appears to be adaptive, for instance as a tool to maintain and reinforce social bonds. In this study, we aimed to test how food retrieval and food sharing varies depending on the social relationship between individuals, and on the characteristics of the food. In six different test conditions, we provided a captive group of Guinea baboons (Papio papio, N = 23) with multiple food items, differing in quality, quantity, density, monopolizability, and effort required to obtain it. We further used behavioral observations to assess individual relationships and possible variations in grooming exchanges linked to food sharing events. Out of 424 events in which food items were retrieved by the subjects, we detected no instances of active food sharing and only 17 of passive food sharing. The way food was retrieved was affected by individual and food characteristics (i.e., quantity, quality, and monopolizability of food): Males and central individuals (i.e., those connected to many partners, and/or having partners with many connections in the social network) were more likely to retrieve food during test conditions. In particular, events of passive food sharing mostly happened when the quality of food was low, and between individuals belonging to the same community (i.e., having close relationships). No other food characteristics affected the probability to share food, and the occurrence of food sharing had no immediate effect on grooming exchanges. Overall, our findings suggest that food sharing is relatively rare in Guinea baboons unless the food has a low quality and individuals form close social bonds.  相似文献

We tested alternative developmental hypotheses describing when during an insect oviposition cycle reproductive tactics are determined. Newly eclosed adult females of the grasshopper Romalea guttata were raised on eight different feeding treatments consisting of a low food diet, a high food diet, and changes from high to low food, or low to high food, at different times during the first oviposition cycle. When initial food availability was high, a decline in food availability >7 days after adult eclosion produced no significant increase in time to oviposition compared to constant high food. In contrast, when initial food availability was low, an increase in food availability as late as day 14 produced a significant decrease in time to oviposition compared to constant low food. Thus, time to oviposition is determined by feeding rate early in the oviposition cycle, but the time of this determination is later when food availability is lower. Masses of individual eggs were unaffected by these treatments. When initial food availability was high, a decrease in food availability on day 21 produced no significant change in numbers of eggs in a clutch compared to constant high food. In contrast, when initial food availability was low, an increase in food availability after day 7 produced no significant change in number of eggs in a clutch compared to constant low food. Changes in egg production resulted from oocyte resorption, which appeared to become unresponsive to food availability between day 14 and day 21. Our results refute the hypothesis that reproductive tactics are continuously flexible. Development toward oviposition seems to be structured so that reproductive tactics become independent of feeding late during the first oviposition cycle. Reproductive tactics become unresponsive to food at different times for groups initially receiving low or high food, suggesting that a particular developmental state, rather than some absolute time, marks the shift to development that is unresponsive to␣food. Plasticity in reproductive tactics appears to be␣controlled by hormones in a manner similar to the hormonal control of plasticity of metamorphosis in other insects. Young omnivores show food neophobia in order to avoid the potential harmful effects of ingesting unfamiliar food items. We investigated whether the presence of the mother and an enriched rearing environment would reduce food neophobia in piglets. A mother may provide information on suitable food types to include in the diet, whereas an enriched environment may stimulate behavioural development and reduce reactivity towards novel stimuli (including food). Five barren-reared or enriched-reared piglets per litter were exposed to two novel food items in the presence, and the other five per litter in the absence, of the mother in a 7 min test. Maternal presence reduced food neophobia profoundly as reflected in a reduced latency to touching the food, a higher proportion of piglets sampling the two different food items and a higher intake. Latency to touch the food, however, was affected by maternal presence more strongly for barren-reared piglets than for enriched-reared piglets, and in the absence of the sow, consumption of one novel food type and time spent in the feeding area were higher for enriched-reared piglets.Environmental enrichment does have the potential to reduce food neophobia, but the presence of the mother during the encounter with novel food seems more efficient in decreasing food neophobia of piglets.  相似文献

In food preference studies, mammals are often categorized as being either neophilic or neophobic, i.e., preferring or disliking a novel-tasting food. To date, the genetic factors influencing novel food preference have not been elucidated. To understand this phenomenon, we investigated the genetics of food preference in eight inbred strains of mice. We gave them plain-, cinnamon-, or cocoa-flavored powdered food on day 0 for 45 min and then a choice of cinnamon- or cocoa-flavored food 14 days later. We determined their preference for novel versus already-experienced flavored food and found that some inbred strains chose the food that they had been given previously, while others chose a different food. In particular, the DBA/2 strain chose more cinnamon-flavored food after it was pre-exposed to cinnamon, while the B6 strain chose less cinnamon-flavored food after this initial exposure. The BXD recombinant inbred (RI) strain set was then used to map quantitative trait loci (QTLs) that influence this novel food preference. Groups of juvenile chum salmon were reared on food that was either dispersed throughout, or localized in one area of, the rearing tank. Groups receiving localized food displayed more aggression than those receiving dispersed food. This led to differences in growth, with fish reared on localized food having greater individual growth variability, i.e. growth depensation. However, after several months of rearing in these different feeding/social environments, fish reared on dispersed food were just as aggressive when first exposed to localized food as were fish reared on localized food. Furthermore, in competitive contests between fish of the two rearing histories, those reared on dispersed food were just as likely to become dominant as those reared on localized food. These results suggest that the behavioural development of aggressiveness is not amenable to alteration by manipulation of food distribution.  相似文献

Polymerase chain reaction denaturing gradient gel electrophoresis (PCR-DGGE) fingerprinting was recently introduced into food microbiology. This paper describes the technique and reports on the state-of-the-art application of this technique to food and food-related ecosystems. Applications of PCR-DGGE in several fields of food microbiology are reviewed: the identification of microorganisms isolated from food, the evaluation of microbial diversity during food fermentation, and microbiological and commercial food quality assessment. Potentials and limitations of this culture-independent approach in food microbiology are indicated and future perspectives are discussed.  相似文献

Achieving global food security is one of the major challenges of the coming decades. In order to tackle future food security challenges we must understand the past. This study presents a historical analysis of global food availability, one of the key elements of food security. By calculating national level dietary energy supply and production for nine time steps during 1965–2005 we classify countries based on their food availability, food self-sufficiency and food trade. We also look at how diets have changed during this period with regard to supply of animal based calories. Our results show that food availability has increased substantially both in absolute and relative terms. The percentage of population living in countries with sufficient food supply (>2500 kcal/cap/d) has almost doubled from 33% in 1965 to 61% in 2005. The population living with critically low food supply (<2000 kcal/cap/d) has dropped from 52% to 3%. Largest improvements are seen in the MENA region, Latin America, China and Southeast Asia. Besides, the composition of diets has changed considerably within the study period: the world population living with high supply of animal source food (>15% of dietary energy supply) increased from 33% to over 50%. While food supply has increased globally, food self-sufficiency (domestic production>2500 kcal/cap/d) has not changed remarkably. In the beginning of the study period insufficient domestic production meant insufficient food supply, but in recent years the deficit has been increasingly compensated by rising food imports. This highlights the growing importance of food trade, either for food supply in importing countries or as a source of income for exporters. Our results provide a basis for understanding past global food system dynamics which, in turn, can benefit research on future food security.  相似文献

Rats were treated with diazepam (DZP) with or without co-administration of naloxone (NLX). Animals were subsequently tested in two settings. Sated rats were tested for food consumption in their home cages for a 1 hr period following injection. Food was then removed and on the following day the fasted animals were placed in an open field for 15 min. A single food pellet (5–6 g) was secured in the center of the open field. Animals were observed and scored on frequency of rearing, grooming, urination, number of approaches to the food, amount of food eaten and x? g food eaten per approach to the food pedestal.DZP treatment increased food consumption by sated animals in their home cages. Naloxone blocked this effect. In the open field, DZP, reduced novelty induced grooming, increased the amount of food eaten and x? g food eaten per approach to the food pedestal. Co-administration of NLX had no affect on these parameters. The primary effect of NLX appears to be on consumatory behavior per se and not on the anti-conflict properties of DZP.  相似文献

We examined how mayfly growth rates and body stoichiometry respond to changing phosphorus (P) content in food. In two experiments, mayfly nymphs were given high or low quantities of food at different carbon:phosphorus (C:P) ratios and their growth was measured. Low food quantity resulted in negative growth rates in both experiments, regardless of food P content. However, under high food availability, mayfly growth was affected by the type of food eaten, with low C:P ratio food producing more rapid growth. In addition, mayfly growth increased somewhat when P-poor food was artificially enriched with inorganic P although this effect was not statistically significant. Mayfly body P content was inversely related to body size but increased in animals fed artificially P-enriched food. A model was constructed to simulate mass balance constraints on mayfly growth imposed by the relative supply of two elements (C and P) in food. The model shows that mayfly growth should be limited by food P content at moderately low C:P ratios ( c . 120, by mass). Given high C:P ratios (mean c.  270, by mass) in periphyton from oligotrophic boreal lakes, our experimental and theoretical results indicate that stoichiometric constraints are important factors affecting benthic food webs in lakes from the Canadian Shield and perhaps in other systems with similarly high C:P ratios in periphyton.  相似文献

水生生境中的食物资源经常变化,鱼类的能量代谢和行为随食物丰度改变的可塑性调节具有重要的进化和生态意义。为考察食物丰度对机体行为和代谢的影响,以雌性宽鳍鱲(Zacco Platypus)为实验对象,分别测定实验鱼在高、低食物丰度组4周喂养期前后的标准代谢率(Standard metabolic rate,SMR)、个性及集群行为。研究发现:(1)经4周喂养,高食物丰度组的体重和SMR上升,而低食物丰度组维持不变,喂养期结束时高食物丰度组的体重和SMR均显著大于低食物丰度组;(2)食物丰度对个性没有显著影响,但集群时,低食物丰度组活跃性较高,凝聚力较低;(3)高食物丰度下SMR保持稳定,低食物丰度下SMR不稳定。研究表明:宽鳍鱲的个性不受食物丰度影响;但食物丰度减少导致能量代谢下降、鱼群活跃性上升和凝聚力下降,可能与食物丰度较低时代谢的适应性下调和食物资源竞争加剧导致的觅食活动需求上升相关。  相似文献

Hibernation and daily torpor (heterothermy) have long been assumed to be adaptive responses to seasonal energy shortage. Laboratory studies have demonstrated that food shortage alone can trigger the use of heterothermy. However, their potential to predict heterothermic responses in the wild is limited, and few field studies demonstrate the dependence of heterothermy on food availability under natural conditions. Thus, the view of heterothermy as an energy saving strategy to compensate for food shortage largely remains an untested hypothesis. In this paper, we review published evidence on the proximate role of food availability in heterothermy regulation by endotherms, and emphasize alternative hypotheses that remain to be tested. Most studies have relied on correlative evidence. Manipulations of food availability, that demonstrate the proximate role of food availability, have been conducted in only five free-ranging heterotherms. Several other metabolic constraints covary with food availability and can confound its effect. Shortage in water availability, the nutritional composition of food, or subsequent conversion of food in fat storage all could be actual proximate drivers of heterothermy regulation, rather than food shortage. Social interactions, competition for food and predation also likely modulate the relative strength of food shortage between individuals. The ecological relevance of the dependence of heterothermy on food availability remains to be assessed in field experiments that account for the confounding effects of covarying environmental and internal factors.  相似文献
