A trained sensory panel was used to (1) establish terminology for describing flavor attributes of a wide range of “fresh” and processed soymilks (SMs); and (2) test the lexicon and describe the flavor properties of a wide range (n = 32) of plain SM samples. Twenty‐eight attributes were identified in the SMs studied. However, findings indicate that the main differences are a consequence largely of the presence of certain attributes that are either infrequently present or unique to a specific product. Thus, sensory evaluation of SM needs to include a review of samples to ensure that all attributes are documented prior to evaluation, or use a method that allows the addition of attributes during testing.  相似文献

A lexicon of terms to describe desirable as well as undesirable flavors in peanuts has been developed. The lexicon and an intensity rating scale was developed by a 13 member panel of flavor and peanut specialists representing industry and the USDA-Agricultural Research Service. The current study evaluated whether flowering phenology and yield attributes of different strawberry cultivars affect the abundance and feeding impact of tarnished plant bug, Lygus lineolaris (Palisot de Beauvois), as well as behavioral decisions made by feeding nymphs and ovipositing adults. The distribution of emerged nymphs in cage experiments involving nine different cultivars of June-bearing strawberry cultivars suggests that females lay more eggs on plants with numerous flower receptacles, while cultivar per se did not influence their oviposition behavior. A large number of nymphs emerged from receptacles of strawberry plants, while the distribution of emerged nymphs among receptacles, petioles, leaves, and stems varied for different cultivars. These results suggest that the relative intensity of damage caused by ovipositing females may vary for different cultivars. Foraging nymphs did not exhibit a preference for any strawberry cultivar per se, although the abundance of nymphs increased with the weight of receptacles, especially for late instars. Evaluating the density and feeding impact of L. lineolaris for different cultivars under field conditions revealed that some host plant attributes affect the abundance of plant bugs, such as early flowering season and high productivity. Decreasing number of emerged nymphs per flower per plant with increasing density of receptacles per plant suggests that females lay relatively more eggs per receptacle on plants with few receptacles; this pattern of oviposition may explain, in part, why patches with low density of plants typically have high incidence of damage. Planting a high yielding early season cultivar such as 'Cavendish' may contribute to reduce the incidence of damage by L. lineolaris.  相似文献

Twenty breadfruit cultivars growing in afield genebank at Kahanu Garden, National Tropical Botanical Garden, Hana, Maui, Hawaii, were evaluated for sensory attributes and nutrient composition. A taste panel scored eight flavor/aroma attributes, five textural attributes, and color. There were significant differences (P ≤ 0.01) in aroma, visual texture, flavor intensity, sweetness, starchiness, moistness, stringiness, firmness, and color. The greatest differences were in color and texture. Nutrient analyses showed significant differences (P ≤ 0.05) for energy, carbohydrates, ash, crude protein, potassium, magnesium, sodium, iron, copper, and zinc. Considering the versatility of breadfruit as a food, its ease of production, and its nutritional value, the numerous good quality flavorful cultivars available should be more widely grown for sustainable agriculture and food security.  相似文献

Cultivated strawberry (Fragaria × ananassa) is an important commercial berry crop grown throughout the world. Improved strawberry cultivars are developed to meet the needs of consumers and breeders. Strawberries are usually propagated through runners, which sometimes lead to mislabeling or misinterpretation of cultivars. However, perfect identification of strawberry cultivars is essential for germplasm maintenance and for breeding programs. Molecular marker technology has been widely used to distinguish cultivars of other crops, but marker development in octoploid strawberries is complicated. Therefore, SNP marker with high-density and even distribution in the genome has been used currently as efficient DNA markers. In this report, previously published high-quality poly high resolution (PHR) SNPs from the 90 K Axiom® SNP array were utilized to develop a Fluidigm 24 SNPs genotyping system. Hundred nine (109) octoploid strawberry cultivars were screened using this 24 SNPs chip set. In addition, 24 SNPs were mapped to six chromosomes of diploid strawberry (Fragaria vesca). Our developed SNPs fluidigm genotyping is automatable, easy and reliable for processing and interpretation of data. Thus, this high-throughput SNP genotyping system will be a useful tool for distinguishing strawberry cultivars and find out parent-offspring relationship.  相似文献

A consumer panel comprising 60 females evaluated three coffee whiteners and fresh milk for a number of sensory attributes including liking of flavor and appearance, overall liking, natural flavor and odor, creaminess and watery flavor. Fourier analysis was used to produce a plot which readily identified the whiteners with sensory profiles most similar to fresh milk. More importantly, the whitener whose sensory profile was significantly different from that of fresh milk was identified from the Fourier plot, something which could not be done by traditional univariate methods or even by an overall discriminant analysis.  相似文献

Lonicera caeruleabrix is a perennial shrub native to North America, Europe and Asia. It produces dark blue berries known as honeyberries or haskap berries which are produced commercially in several territories including Canada, Japan, Russia and Poland. Plants are suited to UK environments, but it is yet to be widely commercially developed in the UK. In the present work, quality and nutritional traits of six honeyberry cultivars grown in Scotland were compared with other commonly grown berry fruits (strawberry, raspberry, blueberry, blackberry, blackcurrant) to aid the identification of environmentally stable, high-quality honeyberry cultivars suitable for UK cultivation. Differences were observed in fruit quality variables (soluble solids, titratable acidity and Brix/acid ratios) between honeyberry cultivars. Three of six cultivars examined exhibited notable variation in soluble solids dependent on harvest year with ‘Aurora’ and ‘Strawberry Sensation’ having consistently high oBrix values. Titratable acidity exhibited cultivar differences and there was limited variation over harvest years. ‘Aurora’ exhibited consistently high oBrix/titratable acidity ratio reflected by high glucose and fructose content. Honeyberry fruit had good nutritional profile relative to other soft fruits with higher polyphenol and anthocyanin content than strawberry, blueberry, blackberry and raspberry, manifested in greater antioxidant capacity. The major anthocyanins in aqueous honeyberry fruit extracts were cyanidin, pelargonidin and peonidin glycosides. These findings indicate that L. caerulea represents a crop suitable for UK cultivation capable of producing high quality fruit with a valuable nutritional profile relative to other soft fruits. Cultivars exhibit significant differences in fruit quality and nutritional profile as well as harvest consistency and growers should consider this when establishing new plantations.  相似文献

A linguistic format for sensory assessment of foods as well as computational methods to analyze taste panel opinions have been developed within the framework of fuzzy set theory. The methodology is demonstrated via sensory analysis of roasted peanuts. Sensory analysis was represented as linguistic values and associated truth values for attributes such as roast flavor, bitterness and overall quality. This format allowed panelists to describe and discriminate different roast characteristics. Replicate analyses of the same sample were reasonably consistent. The linguistic information was simple yet rich in meaning and could be used to make inferences for quality and process control. Yager's ordered weighted median aggregation operator was used to estimate the expected linguistic values for aroma, flavor, bitterness, sweetness, color and overall quality.  相似文献
