Effects of fat cover, bone removal and endpoint cooking temperature on proximate and sensory characteristics of pork center loin chops were investigated. Only brown color of broiled chops was affected by presence of bone and by endpoint temperature. Fat cover only affected perceived chewiness of chops. Broiled boneless chops contained higher percent fat than bone-in chops. There were no differences in protein, fat or moisture percentages in cooked chops due to fat cover. Higher internal temperature decreased percent moisture and increased percent protein. Percent fat did not differ due to internal temperature. A consumer study to determine the degree of liking of pork center loin roasts showed that consumers preferred roasts with no fat cover more than roasts with 0.6 cm fat cover and roasts cooked to 71.1°C compared to roasts cooked to 76.7°C. There was no difference in preference between boneless and bone-in roasts.  相似文献

This study explored consumer liking and perception of pork patties with an added functional health ingredient: shiitake (Lentinus edodes P.) mushroom powder. In addition, patties with and without sodium tripolyphosphate were tested. Both native Korean and U.S. consumers evaluated the products. Pork patties made with both phosphate and mushroom powder were found to be acceptable by Korean consumers, but increases in mushroom powder in patties with phosphate decreased acceptability for U.S. consumers. However, addition of mushroom powder to patties without phosphate increased acceptability for U.S. consumers, perhaps because it tended to increase texture acceptance and juiciness. Thus, addition of mushroom powder as a functional ingredient in pork patties, while possible, would require different formula modifications to appeal to consumers of differing nationalities.  相似文献

Hummingbird flowers are typically red in color but the reasons for this are not well understood. Relatively few studies have examined hummingbird flower color preferences under natural conditions in which flower color varies within a species. We recorded hummingbird visitation rates to flowers that vary in color from yellow to red in a natural hybrid population between red‐ and yellow‐flowered Mimulus aurantiacus subspecies. We also examined whether there were any correlations between color and flower size or nectar content. Finally, we reviewed the literature on hummingbird color choice tests using feeders and flowers. There were no correlations in this population between flower color and flower size, nectar volume, or sugar concentration. Nevertheless, hummingbirds undervisited the two most yellow color classes, overvisited orange flowers, and visited the two most red color classes in proportion to their frequency in the population. While Hummingbirds preferred flowers expressing red pigments to those that did not, the flowers with the most red hue were not the most attractive, as has been observed in similar studies with other species of Mimulus. While feeder studies generally fail to show hummingbird preference for red, all studies using flowers, including those that control all floral traits other than color, find consistent preference for red. Experiments are suggested that might help disentangle hypotheses for why hummingbirds exhibit this preference.  相似文献

We evaluated the effect of the halothane (HAL) gene on the quality of pork in domestic pigs. Half-carcasses from two different commercial pig (Sus domestica) crossbreeds were analyzed, 46 of which were homozygous dominant (HAL(NN)) and 69 of which were heterozygous (HAL(Nn)) for the halothane gene. The measures included backfat thickness, lean meat percentage, carcass weight, pH 24 h after slaughtering, color, and drip loss; DNA was extracted from the haunch muscle. Swine with the HAL(Nn) genotype had less backfat thickness and higher lean meat percentages than swine with the HAL(NN) genotype. Yet, swine with the HAL(Nn) genotype had lower quality meat than those with the HAL(NN) swine. The pH at 24 h was lower in HAL(Nn) swine. The meat color was paler in HAL(Nn) animals, the drip loss was greater in those animals bearing the n allele, and the amount of intramuscular fat was not related to the halothane genotype. We conclude that bearers of the recessive allele of the halothane gene produce more meat, but with quality parameters that are inferior to those sought by consumers and industry.  相似文献

ABSTRACT

Meal replacement products including protein bars, shakes and powdered drinks have increased in demand and sales. The objective of this study was to assess the consumer perception of protein content and type and product claims for meal replacement beverages and bars. The impact of exercise frequency on product perception was also investigated. Focus groups were conducted with exercisers and nonexercisers. An adaptive conjoint analysis survey was subsequently developed and conducted (n = 138 consumers, ages 18–35 years). Relative importance of product attributes was determined through a realistic trade‐off scenario. Utility scores were extracted and rescaled by the zero‐centered differences method, and two‐way analysis of variance was conducted to identify the differences between exercise frequency and product attributes. Both groups preferred bars to beverages, and no clear preferences were observed for protein type, which was consistent with focus group results of low knowledge/understanding of specific proteins. All respondents valued the products with low‐fat/fat‐free, calcium, all‐natural, protein, vitamin/mineral, heart health and muscle‐building claims. Exercisers viewed muscle‐building claims as more important than nonexercisers. Nonexercisers viewed heart health, calcium and vitamin/mineral claims as more important than exercisers. Three distinct consumer clusters were identified, and both exercise groups were found in all three clusters, although exercise frequency influenced membership in two of the three clusters (P < 0.05). These findings can be used to develop and market meal replacement products to specific consumer groups while leveraging their specific and unique needs.

PRACTICAL APPLICATIONS

Conjoint analysis provides a useful model of how consumers think during the purchase process and an understanding of the motivation for purchase through the testing of possible claims or product attributes. By applying this method to the purchase process of meal replacement bars and beverages, those in the field of development of these products can benefit from this information by being able to understand the motivation for purchase by the targeted consumer.  相似文献

Due to their long‐distance migration routes and high longevity, monarch butterflies (Danaus plexippus) are likely to benefit from learning how to discriminate and remember suitable feeding resources. In this study, we assessed monarchs’ abilities to track changing nectar sources over time and to retain learned information presented in two conditioning schedules. Non‐preferred (blue and red) and preferred (yellow) artificial flowers were concomitantly offered to monarchs in a three‐phase experiment. In each phase, flowers of only one color contained sucrose solution, while the others contained water. The rewarding color was changed in each phase. Instantaneous observations were made to assess butterfly visits to each color during each phase; continuous observations over the first 90 min of a new phase allowed us to look in more detail at the transition process. Overall, monarchs tracked sucrose availability, visiting the rewarding flowers more often than the unrewarding ones, regardless of innate preferences. However, butterflies reverted to innate color preferences when the newly rewarding color was different from the initial trained color. In a second experiment, memory decay was compared for butterflies trained according to two schedules: ‘single training’ (sucrose solution in red vs. water in blue artificial flowers in one 15‐min session per day) or ‘intermittent training’ (as above, but in two 7.5‐min sessions per day). Afterwards, butterflies were tested on alternate days for a week in arrays containing unrewarding models of both colors. Following either training schedule, memory persisted for at least 3 d after reinforcement ceased. Our findings reveal that monarchs are able to change their feeding responses according to the flowers’ reward status despite innate preferences, as well as to retain flower information for about half a week regardless of the conditioning dynamics.  相似文献

The evolution of several floral traits is thought to be driven by multiple selective agents, including pollinators and herbivores. Similar combinations of selection pressures may have shaped extra-floral traits. The conspicuous purple tufts of leaves (“flags”), which often terminate vertical inflorescences in the Mediterranean annual Salvia viridis, were shown to attract insect pollinators to the flowering patch. Here we test whether they also function as anti-herbivore signals. We determined the aposematic potential of S. viridis flags on three levels: concentrations of anthocyanins, suggested to function as aposematic visual signals, in leaves and flags; spectrometry to estimate whether the color-vision system of two common Mediterranean generalist herbivores (locusts and goats) can discriminate flags from leaves; and choice experiments to determine food preferences of the same herbivores. Anthocyanin concentrations in flags were >10-fold higher than in leaves. Flags exhibited peak reflectance at 450 and 700 nm wavelengths, while leaves reflected maximally at 550 nm. According to the Vorobyev-Osorio color vision model, these differences in color reflection are likely to allow visual discrimination by herbivores. Goats preferred feeding on clipped inflorescences over control inflorescences. Locusts preferred leaves over flags. To test whether this was due to deterrence from the flags’ coloration, we also offered them choice between leaves and a rare, white morph, of the flags. The locusts chose both equally immediately after presentation, but leaves attracted more individuals after 5 min of feeding. The locusts also preferred green cabbage over anthocyanin-rich red cabbage. These results support the function of colorful extra-floral displays as warning signals.  相似文献

The Colorado potato beetle (CPB), Leptinotarsa decemlineata (Say) (Coleoptera: Chrysomelidae), is a diurnal insect that strongly relies on visual cues to guide its walk. In the present study, we investigated the orientation behavior of non‐diapausing walking CPB in response to emissive colors produced by light emitting diodes (LEDs) in a dual choice arena adapted to a servosphere, where the only illumination available came from the photo‐stimuli. Our results demonstrate that CPB show positive phototactic behavior when stimulated with different wavelengths of light; they preferred to orient towards white (420–775 nm), ultraviolet (UV) (351 nm), blue (472 nm), green (570 nm), yellow (585 nm), orange (590 nm), and red (660 nm) over darkness when both alternatives were offered, but no orientation responses were elicited by infrared (940 nm). Both males and females preferred yellow and green over other colors, but did not show any particular preference between them, thus correlating with their preference for wavelengths reflected by vegetation. Sexual differences were noted in that male CPB preferred white over either red or UV, whereas female CPB did not show any preferences when offered these colors. Female CPB preferred UV and blue over red, whereas males showed no preferences when these colors were offered. Colorado potato beetles turned at higher angles and performed more tortuous walks in complete darkness and when infrared vs. darkness were offered compared with the rest of the colored lights. Both sexes preferred continuous over pulsed yellow light. Colorado potato beetles subjected to pulsed yellow light showed a temporal alteration of their walking performance by walking less, slower, and turning at a higher rate. The results are discussed with regard to the role of color in the CPB attraction to host plants and conspecifics as well as the role of intermittent photic stimuli in their orientation behavior. The information provided here provides a basis for the improvement of trapping devices for detection and survey of incipient or invasive CPB, and development of alternate control strategies for this important pest of potatoes and other solanaceous crops.  相似文献

We investigated the role of seed packaging (division of total seed volume among individual seeds) and fruit color in determining feeding preferences of American Robins (Turdus migratorius). Experiments were conducted using artificial fruits with either 8 small plastic beads or a single large one with equivalent volume. Other fruit characters were held constant. As predicted, large seeds were voided rapidly by regurgitation, resulting in higher pulp consumption rates for large-seeded fruits than for small-seeded ones, whose seeds were passed through the gut. Most birds apparently used this difference in profitability as a choice criterion: four of seven preferred large-seeded fruits. That three individuals did not do so suggests that birds may differ in their ability to perceive minor differences in fruit profitability, or to use them as choice criteria. Pulp color was also important: blue fruits were preferred by all seven birds. This preference was surprising, since Robins commonly feed on red fruits in the field.  相似文献

Habitat specialists form tight relationships with their host habitat and are able to make microscale decisions when selecting final habitat locations. The obligate coral-dwelling fish, Gobiodon histrio, is thought to make habitat choices based on the coloration and structural characteristics of Acropora nasuta, their preferred coral host. Yet, most studies on the habitat preference of G. histrio have been conducted on Australia’s Great Barrier Reef with no understanding if geographic differences in preferences exist. Here, we tested the habitat preference of G. histrio toward A. nasuta on the reefs of Kadavu and Tavewa Islands, Fiji. First, to assess the natural distribution, belt transect surveys of all acroporid corals were conducted. Transects indicated that, while G. histrio is most frequently found in A. nasuta over other acroporid corals, the coral’s structural characteristics rather than the coral’s color variation were the preferred characteristic. In contrast, the Australian G. histrio have been found to be more frequent in blue A. nasuta opposed to the brown color variation, suggesting a geographic difference in habitat preferences among the species. In addition, we conducted two in situ behavioral field experiments to determine whether G. histrio would (1) move from dead A. nasuta to a live brown or blue A. nasuta and (2) preferentially select between the brown- or blue-colored A. nasuta when placed on a dead A. nasuta. The results of the in situ experiments support the finding that Fijian G. histrio does not discriminate between A. nasuta using color but uses only structural morphologies to guide its habitat selection process. Habitat selection is a complex process, and microscale habitat preferences within a species can vary between geographic locations. This study sheds light on the need to expand research findings to incorporate large geographic regions when attempting to understand the preferences of coral reef symbionts.

We conducted two experiments to determine mating preferencesof female American goldfinches (Carduelis tristis). In the firstexperiment, females were allowed to choose among four naturallyvarying males. In the second, females chose among four maleswearing either orange, blue, yellow, or no color bands. In experiment1, females performed more courtship with males that had significantlybrighter bills and were brighter overall. In experiment 2, femalespreferred males wearing orange bands over unhanded males. Blue-bandedmales ranked second and yellow third, but neither was preferredsignificantly more often than the unbanded males. A female'spreference for a particular band color was weakly associatedwith her own bill and plumage measures; females with brighterthroat feathers and yellower bills preferred orange bands toblue bands. The results suggest that female preferences fororange and yellow may be functional and that females may alsohave aesthetic preferences.  相似文献

Marine studies on herbivory have addressed the role of algae as food and shelter for small consumers, but the potential of benthic cyanobacteria to play similar roles is largely unknown. Here, feeding preferences were measured for eight invertebrate consumers from Guam, offered four common macroalgae and two cyanobacteria. The survivorship of another consumer raised on either macroalgae or cyanobacteria was also assessed. From the choices offered, the sacoglossans Elysia rufescens and E. ornata consumed the green macroalga Bryopsis pennata. The crab Menaethius monoceros preferred the red alga Acanthophora spicifera. The amphipods Parhyale hawaiensis and Cymadusa imbroglio consumed macroalgae and cyanobacteria in equivalent amounts, with C. imbroglio showing less selectivity among diets. In contrast to these patterns, in these assays the gastropods Stylocheilus striatus, Haminoea cymbalum, H. ovalis, and Haminoea sp. fed exclusively, or survived only, on cyanobacteria. Preferences for different cyanobacteria varied. Field surveys of cyanobacteria-associated species yielded 34 different invertebrate taxa and suggested different degrees of specificity in these associations. Tropical mesograzers exploit considerably different food resources, with some species adapted to consume cyanobacterial mats. Benthic cyanobacteria may play important roles as food and shelter for marine consumers and may indirectly influence local biodiversity through their associated fauna.  相似文献

The concurrent divergence of mating traits and preferences is necessary for the evolution of reproductive isolation via sexual selection, and such coevolution has been demonstrated in diverse lineages. However, the extent to which assortative mate preferences are sufficient to drive reproductive isolation in nature is less clear. Natural contact zones between lineages divergent in traits and preferences provide exceptional opportunities for testing the predicted evolutionary consequences of such divergence. The strawberry poison frog (Oophaga pumilio) displays extreme color polymorphism in and around the young Bocas del Toro archipelago. In a transition zone between red and blue allopatric lineages, we asked whether female preferences diverged along with coloration, and whether any divergent preferences persist in a zone of sympatry. When choosing among red, blue and phenotypically intermediate males, females from monomorphic red and monomorphic blue populations both expressed assortative preferences. However, red, blue, and intermediate females from the contact zone all preferred red males, suggesting that divergent preferences may be insufficient to effect behavioral isolation. Our results highlight the complexity of behavioral isolation, and the need for studies that can reveal the circumstances under which divergent preferences do and do not contribute to speciation.  相似文献

Plants use colours as signals to attract mutualists and repel antagonists. Fleshy-fruits are often conspicuously coloured to signal different types of information including fruit maturity and spatial location. Previous work on fruit colour selection focus on large diurnal vertebrates, yet fruit colours are perceived differently by frugivores with different types of visual systems. Here, we tested whether a nocturnal, frugivorous, seed-dispersing insect selects fruits based on their pigmentation and whether different lighting conditions affect fruit colour selection. We captured 20 Wellington tree weta (Hemideina crassidens) from a forest reserve on the North Island of New Zealand and brought them into laboratory conditions to test their fruit colour preferences. The fruits of Coprosma acerosa, a native shrub species that naturally produces translucent, blue-streaked fruits, were dyed either red or blue. Fruits were then offered to weta in a binary (y-maze) choice test in two light conditions, either at night during a full moon or under artificial light conditions in the lab. Weta preferred unmanipulated, naturally blue-streaked fruits and artificially-blue coloured fruits over those dyed red. Furthermore, their colour preferences were unaffected by light environment. Our results therefore suggest that weta can discriminate between colours (using colour vision) in both light and dark light environments. Their consistent preferences for colours other than red indicate that weta might be responsible for the unusual colours of fleshy-fruits in New Zealand.  相似文献

Summary The genetically changes forms ofR r arising regularly in maize plants heterozygous for the stippled, light stippled, and marbled alleles, and previously shown to influence aleurone color differentially, were found to affect coleoptile and seedling leaf sheath color also. Failure to demonstrate corresponding differential effects on root pigmentation possibly was due to inadequacy of the testing procedure. Two of the modified forms ofR r were observed to reduce glume and anther color also. Many insects prefer lights with certain spectral properties, and such preferences may be associated with behavioral contexts such as mating, host finding or dispersal. Lycorma delicatula (Hemiptera: Fulgoridae) is a newly invasive species in Korea and is spreading rapidly. It is diurnal and may rely on visual cues for orientation. We conducted a series of three phototaxis experiments to understand spectral preferences in L. delicatula: light/dark choice, UV/white light choice, and color preference experiments. Nymphs of the third and final stages as well as adults were used for these experiments. In the light/dark choice, the orientation of L. delicatula was bimodal between the white light and darkness, for all stages and both sexes. In a choice of UV (395–410 nm wavelengths) vs. white light, L. delicatula of both sexes and all stages preferred the UV light. In the color preference experiment where insects had a choice of four colors in a circular arena, L. delicatula stayed significantly longer in the blue light than in white, yellow or green lights. Overall, nymphs and adults of L. delicatula oriented toward lights with shorter wavelengths, and this orientation was consistent throughout all stages, regardless of sex. It is necessary to investigate the behavioral contexts under which L. delicatula prefers the UV and blue lights.  相似文献

Synopsis I examined the temperature preferences and routine metabolic rates of Pit sculpin, Cottius pitensis, marbled sculpin, C. klamathensis macrops, and rough sculpin, C. asperrimus, of the Pit River drainage of California to determine if the distributional patterns of these species can be explained on the basis of physiological or behavioral responses to temperature. The routine metabolic rates of these species did not increase significantly between 10 and 15°C, indicating an area of thermal compensation. Metabolic rates then rapidly increased between 15 and 20°C (Q10 values>4.0) followed by little increase between 20 and 25°C (Q10 values >2.0), indicating another area of thermal compensation. The final temperature preferenda of Pit, marbled and rough sculpin were 11.2, 12.1 and 13.5°C, respectively. Marbled and rough sculpin appear to be more stenothermal than Pit sculpin. At acclimation temperatures of 10, 15 and 20°C the acute preferred temperatures of marbled and rough sculpin ranged from 11.1 to 14.7° C and 13.3 to 14.4°C, respectively. Values for Pit sculpin ranged from 9.9 to 16.4°C at acclimation temperatures of 10, 15 and 20°C. The distributions of marbled and rough sculpin are consistent with their behavioral and metabolic responses to temperature. The widespread distribution of Pit sculpin is consistent with its greater tolerance of high temperatures and eurythermal behavior, but the absence of Pit sculpin from habitats dominated by marbled and rough sculpin is not consistent with a temperature related explanation.  相似文献

Light colors may affect poultry behaviors, well-being and performance. However, preferences of layer pullets for light colors are not fully understood. This study was conducted to investigate the pullet preferences for four light-emitting diode colors, including white, red, green and blue, in a lighting preference test system. The system contained four identical compartments each provided with a respective light color. The pullets were able to move freely between the adjacent compartments. A total of three groups of 20 Chinese domestic Jingfen layer pullets (54 to 82 days of age) were used for the test. Pullet behaviors were continuously recorded and summarized for each light color/compartment into daily time spent (DTS), daily percentage of time spent (DPTS), daily times of visit (DTV), duration per visit, daily feed intake (DFI), daily feeding time (DFT), feeding rate (FR), distribution of pullet occupancy and hourly time spent. The results showed that the DTS (h/pullet·per day) were 3.9±0.4 under white, 1.4±0.3 under red, 2.2±0.3 under green and 4.5±0.4 under blue light, respectively. The DTS corresponded to 11.7% to 37.6% DPTS in 12-h lighting periods. The DTV (times/pullet·per day) were 84±5 under white, 48±10 under red, 88±10 under green and 94±8 under blue light. Each visit lasted 1.5 to 3.2 min. The DFI (g/pullet·per day) were 27.6±1.7 under white, 7.1±1.6 under red, 15.1±1.1 under green and 23.1±2.0 under blue light. The DFT was 0.18 to 0.65 h/pullet·per day and the FR was 0.57 to 0.75 g/min. For most of the time during the lighting periods, six to 10 birds stayed under white, and one to five birds stayed under red, green and blue light. Pullets preferred to stay under blue light when the light was on and under white light 4 h before the light off. Overall, pullets preferred blue light the most and red light the least. These findings substantiate the preferences of layer pullets for light colors, providing insights for use in the management of light-emitting diode colors to meet pullet needs.  相似文献

Summary Both habitat structure and risk of predation are thought to influence rodent community composition in different habitats, but experiments on the degree to which these factors determine the use of habitat by rodents are lacking. I sought to discover (1) if cover density altered habitat choice and (2) if cover density affected the vulnerability to predators of two rodents, a habitat specialist and a habitat generalist. In laboratory experiments, the habitat specialist, the red-backed vole (Clethrionomys gapperi), preferred greater densities of both vertical (wall) and horizontal (ceiling) cover. The habitat generalist, the deer mouse (Peromyscus maniculatus), also preferred greater densities of vertical and horizontal cover, but its preferences were weaker and more inconsistent than those of C. gapperi In tests of vulnerability to domestic ferrets, C. gapperi were more vulnerable in arenas with less vertical cover, while P. maniculatus did not differ in vulnerability between the two vertical cover densities used. Vulnerability to predators in differing densities of horizontal cover was not tested because of the reduced differences in preference for this cover type between the rodent species. Risk of predation is one explanation for C. gapper's inherent preference for denser cover.  相似文献
